Baked Brie and Apricot en Croute

Recipe from Peggy Finnegan

This recipe is an easy appetizer that you can bake just before guests arrive.

Ingredients:

♦ Puff pastry

♦ Wheel of brie cheese, rind intact

Apricot King Apricot Jam

♦ Egg wash (1 egg white and 1 tbsp. water, mixed

Directions:

1) Thaw a sheet of puff pastry.  Pepperidge Farm makes a good one.  Roll out gently on a floured surface.

2) Top pastry sheet with a thick layer of jam approximately the same size and shape of the brie wheel.

3) Place the brie on top of the jam.  Trim the pastry edges, fold over brie, and secure edges.

4) Brush the top with egg wash.

5) Bake seam side down at 400 degrees for about 20 - 30 minutes or until golden brown.

6) Let sit for 10 minutes before serving with crackers.  So yummy!
