Ingredients:
- 1 pound fresh apricots (or canned, drained)
- 2 jalapeno peppers, roasted, peeled, with seeds removed
- 1 red bell pepper, roasted, peeled, with seeds removed
- 1 cucumber, peeled, with seeds removed
- 1/2 red onion
- 1/2 bunch cilantro or flat parsley
- Juice of 1 lime
- Pinch of sugar
- Pinch of salt and black pepper to taste
Directions
Dice the apricots, jalapenos, bell pepper, cucumber, and onion and place in a bowl. Chop cilantro and add to the apricot mixture. Add the lime juice, sugar, salt and pepper and mix well.
Makes 4 servings.
