Apricot and Roasted Pepper Salsa

Ingredients:

  • 1 pound fresh apricots (or canned, drained)
  • 2 jalapeno peppers, roasted, peeled, with seeds removed
  • 1 red bell pepper, roasted, peeled, with seeds removed
  • 1 cucumber, peeled, with seeds removed
  • 1/2 red onion
  • 1/2 bunch cilantro or flat parsley
  • Juice of 1 lime
  • Pinch of sugar
  • Pinch of salt and black pepper to taste

Directions

Dice the apricots, jalapenos, bell pepper, cucumber, and onion and place in a bowl. Chop cilantro and add to the apricot mixture. Add the lime juice, sugar, salt and pepper and mix well.

Makes 4 servings.
