Ingredients:
- 1 can (17 oz.) apricot halves
- 2 tbsp. salad oil
- 1 chicken (about 3 lbs.) cut into serving pieces with skin removed.
- 3/4 tsp. salt
- 1/8 tsp. cinnamon
- 1/8 tsp. cloves
- Water
- 1 Tbsp. cornstarch
Directions
Drain apricots, reserving 1/4 cup syrup. In large skillet, heat oil. Brown chicken on all sides; drain off drippings. Sprinkle chicken with salt, cinnamon, and cloves. Add reserved syrup and 1/3 cup water. Cover and simmer 20 minutes. Add apricots and simmer 10 minutes longer. Transfer chicken and apricots to serving dish. Blend cornstarch and 2 Tbsp. water; stir into sauce. Cook and stir 1 minute and pour over chicken.
