Apricot Granola Cookies

Ingredients:

  • 1/2 cup butter or margarine
  • 1 cup firmly packed light brown sugar
  • 1 egg
  • 3 Tbsp. milk
  • 1 tsp. vanilla extract
  • 1 1/4 cups flour
  • 1/2 tsp. baking soda
  • 2 cups Apricot Granola

Directions

Cream butter and sugar until smooth; beat in egg, milk, and vanilla extract. Mix together flour and baking soda; stir into sugar mixture. Add granola and mix well. Drop by rounded teaspoons onto lightly greased cookie sheets. Bake in 350 degree oven 10 minutes or until lightly browned.

Makes about 6 1/2 dozen.
